This kohlrabi is named Konstance for a reason: it's reliable! And it has a longer harvest time, with Konstance continuing to produce uniform flat-round globes (think grounded UFOs) that resist cracking and hold their eating quality longer than most after harvest. These long-lasting, 3-inch "bulbs" have white flesh and smooth skin that is a vibrant purple hue, which extends into the stems and leaf margins, producing a lovely leafy plant that fits beautifully into an edible landscape. The bulbs are nearly fiberless and have a crisp texture and a sweet, peppery flavorsimilar to a turnip, but milder and sweeter. A versatile vegetable, kohlrabi is good raw, roasted, or even pickled. Kohlrabi greens are also nutritious and delicious, especially when young and tender, and can be used much like spinach.
A Brassica oleracea var. gongylodes (Gongylodes Group) variety, commonly called kohlrabi, Konstance, a hardy biennial, is a member of the cabbage and mustard family (Brassicaceae or Cruciferae), known as crucifers, brassicas, or cole crops. Konstance is a stem vegetable, not a root vegetable, that grows to a mature height of 12 to 16 inches, with a 12-inch spread. Its upright stems are flexiblenice for bunchingand they form a rounded turnip-like enlargement ("bulb") above the soil.
Konstance kohlrabi resists fusarium and black rot and grows best in a sunny location with organically rich, consistently moist, freely draining soil. In the garden, plant kohlrabi seeds 1/2 inch deep and 4 inches apart in rows spaced 18 inches apart, thinning seedlings to 8 inches apart. For containers, plant 3 seeds or 1 transplant in each 12-inch-wide container. Fertilize seedlings after planting.
A cool-season, winter-hardy vegetable, one of the first to be planted in the garden, Konstance kohlrabi seed can be direct sown into the garden as soon as the soil is workable in early spring, about 4 to 6 weeks before the last frost date. Seeds can also be started indoors 6 to 8 weeks before transplanting into the garden, early spring and fall. For an extended harvest, succession plant every 2 weeks. Kohlrabi needs cold temperatures to germinate and grow, withstanding light frost and temperatures below 28°F. Row covers offer added protection if heavy frost is expected. Adding mulch around the base of kohlrabi plants helps to moderate soil temperature and to maintain soil moisture.
